 Banana Chocolate Chip Einkorn Muffins

  • 2 eggs
  • 3 large ripened bananas
  • 1/2 of butter
  • 1/2 cup of raw honey
  • 1/2 cup of coconut sugar (I get mine at Trader Joes)
  • 2 tsp of vanilla (optional)
  • 2 tsp baking soda
  • 1 tsp salt
  • 3 cups of all purpose einkorn flour (I use THIS ONE)
  • 1 cup of chocolate chips (I use organic dark chocolate chips)

Preheat oven to 350 degrees. Grease the muffin pan with coconut oil.  Blend the bananas with your mixer first then add all the rest of the ingredients. Mix until well combined. Stir in the chocolate chips. Pour the batter in your muffin pan (I used this one) and bake for 30 minutes (depending on your oven).

Banana Bread Muffins w/Einkorn flour

  1. 3 bananas ripened
  2. 1 1/2 cups Einkorn flour
  3. 1/3 cup melted butter
  4. 1 cup sugar ( I use organic coconut sugar) **note if you use coconut sugar, the bread will be more brown**
  5. 1 egg
  6. 1 teaspoon vanilla extract (optional)
  7. 1 teaspoon baking soda
  8. Pinch of salt

Put all ingredients into a bowl and mix until well combined. Grease bread pan or muffin pan (I used this one) and pour batter into dish or pan. Bake at 350 degrees for 25-30 minutes (time depends on your oven). I use the toothpick method to tell if they are done. If it comes out clean, take them out and let cool for 10 minutes. Mine turned out super soft and moist – amazing!

Coconut Macroon Recipe

5 1/2 cups of organic shredded coconut flakes (I use Trader Joe’s for $1.99 per bag)

1 14 oz can of organic condensed milk (I get mine from Trader Joe’s $2..99) *DO NOT buy evaporated milk*

2-3 tablesppons of organic Vanilla Extract (I buy mine from Whole Foods)

Directions:

1. Preheat oven to 325 degrees.

2. Use parchment paper or line baking sheet with organic coconut oil (spread with a paper towel).

3. In a large bowl (biggest one you can find) and combine coconut flakes, condensed milk and vanilla extract and blend/mix well by hand.

3. Use a cookie scoop or ice-cream scoop to scoop small round balls of coconut mixture on to your baking sheet leaving 1 1/2″ between each cookie.  (Tip: I ended up using my hand to mold each cookie into a perfect round ball – it’s messy and your hands get sticky but it works)

4. Bake for 10-12 minutes or until top is lightly brown around the edges.

5. Let cool and enjoy!

Other notes

– This made two large sheets full of macaroons and I baked each sheet separately to ensure the perfect result.

–  If you use the method of lining in coconut oil, know that it will be hard to get each macaroon off the pan. I don’t have parchment paper and I use a spatula to remove each cookie after it’s cooled.  This is by far the BEST and most delicious I’ve eaten in a LONG LONG TIME!  I wouldn’t suggest eating this often since there is a lot of sugar content in the organic condensed milk (organic sugar cane) but once in awhile, it’s such a delicious treat!
